Abstract
A schematic layout of a carbon dioxide refrigeration plant is offered for fishing vessels. Fish cooling processes have been studied for this plant. As a result, the changes of the temperature field and kinetics of the heat sink have been recorded for the mode when fish carcasses were cooled with carbon dioxide at the temperatures –30, –50 and –70 °С in the plant. The values of heat flow density and heat transfer factor have been found for these temperatures. A nomogram is presented to facilitate identification of the amount of carbon dioxide required to cool the catch. Decreasing the temperature in the plant in the process of cooling makes it possible to reduce the duration of cooling, but carbon dioxide consumption in this case increases.
Keywords: fish, carbon dioxide, sublimation, temperature field, heat flow density, heat conduction, isotherms, consumption rate.
